Almond Flour Pasta (Gluten Free)

  • 2 cups Almond Flour
  • 2 cups GF Cornstarch
  • 2 tbsp + 2 tsp Guar Gum (or Xantham Gum but it is a little more expensive)
  • 6 Eggs
  • 1 tsp Salt
  • 1/3 cup water (or enough to make the dough stick together)


  1. In a large bowl, mix together almond flour, cornstarch, salt and xantham gum until it is well mixed
  2. Once the dry ingredients are well mixed, create a well in the center (for example: just like you would do with your mash potatoes when adding gravy) and add the 3 eggs
  3. If you are using a kitchen add or another kind of mixer, make sure you beat the eggs while they are in the well before mixing together with the rest of the dry ingredients
  4. Stir all ingredients together until you can knead with your hands and the dough isn’t sticky
  5. Sprinkle a little flour on the dough and wrap in plastic wrap
  6. Let the dough sit for 30 minutes in a cool/dry place in your kitchen
  7. Once the dough is ready, take the ball of dough out of your bowl and cut in fourths
  8. From here you can do a few different things such as: use a traditional pasta roller and cutter to make long noodles or (like I use) a Kitchen Aid Gourmet Pasta Press to create the anything from fusili to penne pasta.
  9. Bring a large pot of salt water into a rolling bowl and drop the noodles in for approx. 1 minute
  10. Drain the noodles and toss with olive oil
  11. Top with whatever sauce or toppings you would like and serve immediately
